Decadence: A Luxurious Self-Indulgence

The Oxford dictionary lists decadence as “a luxurious self-indulgence” and boy does that sound good to me! Last night I was feeling so inspired in my clean and organized kitchen, I decided to make everything look fancy in a not-too-fancy way!
I had just bought a bottle of Pama (pomegranate liqueur) that just spelled decadence to me, so that would be included in the creation for sure! I took a walk outside and found some lovely flowers that would add their beauty to the evening.
Going with this red and white theme that seemed to be developing, I thought “pasta!” So I decided on Chicken Cacciatore, which I LOVE and remember my mom making all the time when I was little. I keep things simple when it comes to cooking, because I don’t want too many dishes, and my kids will not allow me to spend too much time standing at the stove.

So here is my quick and easy recipe for Chicken Cacciatore Chicken Cacciatore
Ingredients:
1/2 a bag/box of rigatone noodles
1 jar of your favorite pasta sauce (I used “chunky italian sausage”)
6 chicken tenders defrosted
*Season w/salt ‘n’ pepper to taste
2 Tbs. oil (I used truffle oil, but any oil you love is fine!)
1/2 a large onion, chopped
4 cloves garlic minced
pinch of thyme
pinch of rosemary
1 small can sliced olives
3-4 artichoke hearts, chopped
1-2 cups chopped spinach (I prefer fresh, but frozen would be fine)
Feta or parmesan cheese

Chicken Cacciatore over Rigatone topped with Feta & Flowers
Directions:

Boil rigatone in salted water, drain, drizzle with olive oil and set aside

Heat oil in skillet and saute onions 3-5 minutes

Chop and season chicken, add to skillet.

Add garlic, thyme and rosemary.

Stir and cook until chicken begins to brown, then add spinach and stir. (If spinach was frozen, I’d add it just before chicken began to brown)

Add pasta sauce, olives, artichokes, and more black pepper. Turn heat to med/low.

Stir and let all the flavors blend together for another 5 minutes.

Dish over rigatone noodles, and top with your favorite cheese!
Sparkling Pomegranate
*In a glass filled with ice, fill halfway with pomegranate liqueur and top with ginger ale. Yum!

Oh MY! I want to eat dinner at YOUR house! This is sooo beautiful and I’m sure it was absolutely delicious!! Isn’t awesome nourishing yourself with beautiful food! (I just may copy that recipe!!!)
